Fleming’s Prime Steakhouse & Wine Bar Opens New Restaurant in Anaheim

Fleming’s Prime Steakhouse & Wine Bar, a distinguished fine dining steakhouse is expanding its California roots with a new restaurant in Anaheim, Calif. Set to open on Wednesday, February 17, the restaurant will be located on the ground floor of the soon-to-open The Westin Anaheim Resort™, a AAA Four Diamond property, opening in March 2021 directly across from the Anaheim Convention Center and Disneyland. The new Anaheim restaurant is one of twelve in California, inspired by the very first Fleming’s in Newport Beach.
The new prime location with nearly 8,000-square-feet of space is ideal for private events, special occasions and hosting holiday celebrations. It also currently offers abundant outdoor seating that provides for a spacious, socially distanced outdoor dining experience. The refined open-air venue safely accommodates 28 tables. Reservations are encouraged but not required, and curbside pickup and delivery are also available.

Delivering on its promise to provide world-class cuisine with an emphasis on prime steak, Fleming’s Anaheim will offer a wide selection of dry-aged and wet-aged specialty and classic cuts, including the popular 8-ounce Petite Filet Mignon and 35-ounce Prime Tomahawk. Every USDA Prime steak cut offered on the dinner menu is aged for 21 days for depth of flavor and texture, before undergoing a meticulous preparation process that includes broiling at 1,600 degrees to form a perfectly crisp, brown crust every time. Outside of steaks, the menu also features top quality seafood such as Seasonal Lobster Tails, Scottish Salmon Fillets, and Miso Glazed Chilean Sea Bass. Guests who prefer to eat plant-based can choose from a menu filled with meat and dairy-free selections including a Chickpea & Eggplant Croquette, Cauliflower Mashed Potatoes, Roasted Asparagus and more.
Complementing the diverse menu, Fleming’s offers a carefully crafted wine list composed of both locally sourced selections from California’s own Napa Valley and as well as wines from the finest vineyards around the world. Local Wine Manager Danny Rashidi and National Director of Beverage Stephen Blevins designed the wine list with every flavor profile in mind, so that each menu selection from steak to plant-based has a wonderfully suited wine to pair. At Fleming’s Anaheim, guests can also choose from a selection of classic and seasonally inspired cocktails such as the Fonseca Sour made with Four Roses Single Barrel bourbon, cinnamon syrup and fresh lime topped with a touch of Fonseca Bin 27 Port or the SoCal V&T with Absolut Elyx vodka, craft tonic, California seasonal herbs and ripe fruit.
Leading the new Fleming’s in Anaheim is Operating Partner, Casey Valverde, who has almost two decades of experience with Fleming’s, and Chef Partner, Curtis Mar. Casey Valverde comes from the Newport Beach location and has worked for Fleming’s for 17 years, from Las Vegas to San Diego. His extensive first-hand knowledge of the ins and outs of the restaurant business and the Fleming’s brand have paved the way to creating memorable guest experiences. Chef Curtis Mar specializes in the art of prime steak, premium seafood and culinary innovation. He graduated from the California Culinary Academy and brings nearly 20 years of culinary experience to the brand’s newest location, four of which were spent at Fleming’s L.A. Live restaurant. When Chef Mar is not expertly preparing world-class cuisine in the Fleming’s kitchen, he’s composing Asian-style cuisine at home in his own.
A DINING DESTINATION
Fleming’s Anaheim boasts a main dining area that provides a sophisticated and sumptuous ambiance, adorned with large format décor, unique cove and decorative lighting, and coffered ceilings. The brand’s signature exhibition kitchen offers guests an opportunity to see the attentive care and precision that goes into each culinary creation happening right before their eyes, making the fine dining experience that much more memorable. Complete with an island bar and two wine rooms, the nearly 8,000-square-foot space can accommodate 217 guests.
Primed for catering, special events and conventions, the restaurant offers two private dining rooms, complete with AV presentation capabilities that will serve as fantastic options for business functions as well as small-scale and large-scale celebrations. Fleming’s event menus offer a range of formats to accommodate every occasion type including a classic lunch menu for business luncheons or a luxurious four-course estate menu for grander events. Catering services feature multi-coursed menus that can accommodate any party size or the option to create a customizable package for 12 or more.
