Chef Jayro Martinez leads a bold new rooftop dining concept blending premium steaks, Spanish flavors and interactive culinary moments high above Anaheim
Top of the V, the rooftop restaurant atop The Viv Hotel, Anaheim, a Tribute Portfolio Hotel, has officially debuted its reimagined identity as a Spanish-inspired steakhouse, unveiling a transformed dining experience following its grand reopening celebration on Feb. 23.
The newly refreshed concept introduces a vibrant culinary and design evolution at Anaheim’s highest rooftop restaurant, pairing premium steakhouse offerings with Spanish coastal influences, theatrical tableside presentations and sweeping panoramic views of the resort corridor. Designed as both a destination for locals and an elevated experience for travelers, Top of the V blends bold flavors, shareable dining and immersive service moments into a lively social atmosphere that transitions seamlessly from sunset cocktails to evening celebrations.
The Grand Reopening Celebration:
The grand reopening event was marked by a ribbon-cutting ceremony led by the Anaheim Chamber of Commerce. The ceremony included certificate presentations on behalf of local and state officials recognizing the restaurant’s contribution to Anaheim’s evolving hospitality and dining landscape. The celebration welcomed members of The Viv Hotel’s ownership group, Schulte Hospitality Group, partners from Disneyland® Resort - where the hotel is recognized as a Good Neighbor property - as well as media representatives, content creators, local business partners and clients. Guests experienced previews of the new Spanish steakhouse menu, signature cocktails and the refreshed rooftop design while enjoying panoramic views overlooking Anaheim’s resort district.

On most nights, guests can also enjoy clear views of the Disneyland® Resort fireworks, adding an unexpected moment of spectacle to the rooftop dining experience.

A private dining room located behind the main kitchen offers a refined setting for small groups, while the bar area anchors the social energy of the room with glowing suspended lighting and panoramic sunset vistas. The refreshed layout enhances indoor-outdoor flow, reinforcing Top of the V’s identity as a destination rooftop experience. With nearly 5,000 square feet of flexible indoor-outdoor space accommodating up to 150 guests, the venue continues to expand its appeal for group buyouts, corporate gatherings and social celebrations centered in the heart of Anaheim.
Guests can now experience the restaurant through the newly introduced “Dine Above It All” package, combining an overnight stay at The Viv Hotel with a rooftop dining experience at Top of the V.
